Blend: 95% Nielluccio and 5% Sciacarello from organically grown vines planted on granitic soils in the village of Casta, Northern Corsica. Manual harvest, with sorting of the grapes in the vineyard. Natural vinification without additives: direct pressing, cold settling for 24 hours, racking of the clear juice by gravity, slow fermentation in stainless steel vats, 6 months of aging on fine lees. Not fined or filtered, bottled at the Estate with just a micro dose of sulfur.
