Blend of 90% Nielluccio and 10% Sciaccarello from organically grown vines planted on granitic soils in the village of Casta, North of Corsica. Manual harvesting. Vinification : total destemming, 15 days of maceration in stainless steel vats, indigenous yeasts, daily gentle pump-overs. Devatting by gravity, pressing, blending of the free run juice and the press juice. Blending of the parcels after malolactic fermentation, 24 months of maturation in stainless steel vats on fine lees. Not fined, nor filtered, micro dose of sulfur at bottling.
