A favorite from our tasting, a beautiful and unusual expression of the grape variety, with notes of blueberry, thyme, truffle, undergrowth and violet. Palate: supple, almost candied, melted tannins, delightful length with black fruits aromas.

A 100% Syrah cuvée made from organically grown vines, planted on granitic soils in the village of Casta, North of Corsica. Manual harvesting. Vinification: total destemming, 15 days of maceration in stainless steel vats, indigenous yeasts, daily gentle pump-overs. Devatting by gravity, pressing, blending of the free run juice and the press juice. 12 months of maturation in old casks, on the lees ; followed by 11 months of maturation in stainless steel vats. Not fined, nor filtered, micro dose of sulfur at bottling.
