100% Zibbibo, the local name for Muscat of Alexandria, made from old vines grown organically, planted on volcanic soils in the Northeast of the Pantelleria island, and pruned using the Alberello method, close to the ground to protect the grapes from the sun and the wind. Manual harvest, destemming and light crushing, two days of maceration, pressing in a wooden press, the first 3 months of aging are on the total lees in stainless steel tanks, racking, micro-dose of sulfur, end of aging in those same tanks. Bottled by gravity in August 2022.
