A 100% Chenin cuvée, from a parcel of 45-year-old vines, grown organically and planted on Turonian-age chalky soil. Manual harvest and low yields. Vinification: slow direct pressing, a slow fermentation and maturation for two years in barrels that have seen several wines. Unfined, unfiltered, just a homeopathic dose of sulphur at bottling.
