Blend of 1/3 Chenin, 1/3 Chardonnay and 1/3 Menu Pineau, from 37- to 43-year-old vines, grown organically and harvested by hand. It is a natural sparkling wine, therefore vinification using the ancestral method: direct pressing, start of fermentation in vats, bottled with 15 grams of residual sugar/liter in order to create effervescence in the bottle, 24 months of aging on laths, then disgorged in order to remove the lees. Without dosage, not fined, not filtered, without added sulfites.
Hervé Villemade is a natural winemaker situated within the Cheverny appellation. Less of a media darling than his famous neighbour Thierry Puzelat , Hervé and his 25-hectare estate nonetheless have nothing to be shy about. You might say there’s a gentle and productive form of competition between them, a source of motivation perhaps... When the family estate was handed over to him in 1995,...All wines
