Superb aromatic sparkling wine, perfumed with notes of flower and a mineral framework. A straightforward, clean, thirst-quenching juice, pure and fresh. This is a brut sparkling.
80% Muscadelle and 20% Semillon from Demeter certified biodynamic vineyards, harvested by hand. Vinification: direct pressing of the two varieties, alcoholic fermentation in concrete vats, racking of the must during fermentation with residual sugar, which Anne froze. At the end of fermentation, she added this original must to the wine to start a second fermentation in the bottle. No disgorging, fining or filtration, no sulfites added.
