65% Côt (20-year-old vines) and 35% Gamay (40 years old) grown organically on flinty clay. Grapes are harvested by hand. Vinification: the two grape varieties are vinified together, 100% destemmed, semi-carbonic, maceration for 10 days, indigenous yeasts, with punching down, and pumping over of must, all to better extract flavour and body. Matured for 11 months in Bordeaux barrels that have seen several wines, then blended in conical vats. Just a little dose of sulphur at bottling.
