A nose with notes of flowers and pears. Palate: a complex sparkling wine, dry and taut, with a lingering finish. Lovely energy! This is the Arcane cuvée vinified as a brut nature sparkling wine.
100% Chenin from biodynamically-grovwn vines planted on a Jurassic-era plateau made up of siliceous gravel mixed with slightly clayey earth. Free of any limestone, the soil permits for the growth of very deep roots. The climate allows for slow, gradual ripening. Manual harvest. Vinification is meticulous: direct pressing, aged on lees in concrete vats for one year. Addition of fresh juice from the 2021 harvest to re-start the fermentation. Bottled, then aged on laths. A disgorged cuvée, without dosage.
Guillaume Pire was born in Belgium, he grew up in Madagascar. In 1998, the Pire family bought the Château de Fosse-Sèche.
