70% Chenin and 5% Cabernet Franc from organically farmed vines on the small “La Guerrière” plot in Saint-Germain-sur-Vienne. Hand-harvested and blended with 20% Chardonnay and 5% Grolleau Gris. Vinification: direct press of all four grape varieties, followed by alcoholic fermentation in new barrels. The wine is then aged 3/4 in vats and 1/4 in barrels. Bottled at the estate without fining, filtration, just a tiny bit of sulphur.
