100% Grolleau Noir for this vintage, from 35-year-old vines, all farmed organically and planted on a plain. The grapes are harvested by hand, followed by natural vinification: maceration in whole bunches, followed by gentle pressing, and 8 months of maturation in concrete vats. Bottled at the estate without fining or filtration, and just a micro dose of sulphur.
