A truly beautiful expression of the grape variety on this specific terroir. Citrus notes: mandarin, grapefruit, candied lemon, which evolve quickly on exotic fruits, white flowers, just a hint of chalk. Palate: lively attack, lots of freshness and finesse, mineral backbone.

Third vintage for this Sauvignon from vines planted on several parcels, showing white earths and flint soils in Pouilly Fumé appellation. Guillaume works with a winegrower friend he has known for more than 20 years, and pampers the vines throughout the year. Manual harvest in small crates. Vinification: direct pressing, use of nitrogen in order to inert the wine, therefore no sulphiting of the juice in its first year. 18 months of aging in vats, on the lees. Intelligent use of sulfites before bottling.

Guillaume Sorbe is part of a generation of winegrowers who work modestly, rigorously, and unrelentingly – and produce simply exceptional wines. After starting out as a cook, then a sommelier, he finally turned to winemaking, receiving his BTS degree in winemaking and viticulture in Beaune. This winegrower's son then founded his own estate in 2006, borrowing his great-grandmother's maiden name...
