Zuma is short for Moctezuma, the last Aztec emperor; this cuvée was vinified with Oscar Mancillas, a Mexican-born winemaker! An exotic nose of roasted pineapple, passion fruit, dried apricot, and white flowers. Palate: taut, with mouthwatering acidity and lovely bitter notes on the finish.

A blend of organic grapes from Julien Valiente, a tractor driver at Domaine Gauby, whose vineyards are next to Raphael's: 50% Macabeu from 60-year-old vines, and 45% Grenache Noir and Gris from 20- to 30-year-old vines, planted on clay-limestone soils with rounded pebbles. Direct pressing and vinification of the three grape varieties is followed by the addition of 5% Roussanne (macerated in whole bunches for 12 days) then 8 months of maturation in stainless steel vats. Bottled April 2021 without fining or filtration, and just a microdose of sulphur.
