A project born at La Falize, a fermentation hotspot, with one simple idea: make something that lives between wine and market-garden produce. The first trials kicked off in 2021, in the kitchen, with tiny batches — before scaling up to dial in the balance. Soybeans are cooked in a pot, then mixed with roasted wheat, and the whole thing gets inoculated with koji. After three days of fermentation in barrel, a brine of Guérande salt and La Falize well water goes in. That's when the second fermentation kicks off — in old Cantillon and 3 Fonteinen barrels — running for two full years, with regular bâtonnage to keep everything moving. The resulting paste is then pressed in a small vertical basket press, through cheesecloth, before bottling at Domaine La Falize.
This original soy sauce comes from barrel n°54 — even though these are literally the very first bottles ever produced. Which tells you everything about how exacting the La Falize crew is on every single batch.
