A project born at La Falize, a fermentation hotspot, with one simple idea: make something that lives between wine and market-garden produce. The first trials kicked off in 2021, in the kitchen, with tiny batches — before scaling up to dial in the balance. Soybeans are cooked in a pot, then mixed with roasted wheat, and the whole thing gets inoculated with koji. After three days of fermentation in barrel, a brine of Guérande salt and La Falize well water goes in. That's when the second fermentation kicks off — in old Cantillon and 3 Fonteinen barrels — running for two full years, with regular bâtonnage to keep everything moving. The resulting paste is then pressed in a small vertical basket press, through cheesecloth. For this "Sweet & Spicy", the sauce goes back into barrel to infuse with chili peppers (grown right there, ultra-local, on Domaine La Falize) and cane sugar, before bottling at the Domaine.
This particular batch comes straight from barrel n°3 — meaning these are quite literally the very first bottles of this recipe ever made. We feel lucky to be one of the very first to get our hands on it, and even luckier to share it with you. Grab it while it lasts — there's not much of it, and there won't be more like it.
