Blend of 60% Persan and 40% Mondeuse Noire, from vines grown organically and planted on a soil of schist and mica on the Coteau de Cevins. The extreme slope (as steep as 60%) does not allow for the use of any machinery, so all the work is done by hand, with yields around 25 hl/ha. Vinification is done in vats, half destemmed and half whole clusters, indigenous yeasts, 18 months of aging in barrels and casks that have seen several wines. Bottled at the Estate with a tiny pinch of sulfur.

Brice Omont, child of the 1976 vintage, has created a cru in the mountainside. In the 1990s, they started cutting back the forest, rebuilding the ancient terraces and planting grapes anew... and so was born a very unique vineyard, the Coteau de Cevins.
