Blend of 60% Persan and 40% Mondeuse Noire, from vines grown organically and planted on a soil of schist and mica on the Coteau de Cevins. The extreme slope (as steep as 60%) does not allow for the use of any machinery, so alml the work is done by hand, with yields around 20 hl/ha. Vinification is done in vats, with a maceration lasting 2 to 3 weeks, indigenous yeasts, and maturation for more than a year in barrels of two or three wine. Bottled at the Estate in January 2022 with a tiny pinch of sulfur.
