A 100% Chasselas cuvée, from 55-year-old vines cultivated biodynamically and planted on pebbly soils with abundant stones over granite and glacial moraine in the Vin-des-Allobroges appellation area, east of Thonon-les-Bains. The vineyard is ploughed by horse and, of course, harvested by hand. Vinification: direct pressing, almost 10 months of maturation in concrete eggs and demi-muid barrels that have seen several wines, with just a little sulphur. Bottled at the Estate in May 2021.
