Fermented alcoholic beverage made from Japanese mandarin.
Upon his return to Japan in 2016, Hirotake Ooka established La Grande Colline, this time in his country of origin. Deeply attached to the philosophy of Masanobu Fukuoka, he also produces fermented beverages using citrus fruits from the Fukuoka farm. Amanatsu, which means “sweet summer mandarin,” proved to be particularly abundant and high in quality in 2022 (the third vintage of this cuvée).
Produced from fruit harvested from trees over 50 years old that have never been exposed to chemical treatments. The whole fruits are pressed with their skins for an entire night, the juice is filtered through a coarse sieve and transferred to a tank, where natural fermentation begins. After 10 days, the juice is bottled by gravity. No fining, no filtration, no additives.
