The Lambics of the Cantillon Brewery are called « young » after one year of aging and reach their full maturity after three years. The young beers contain the natural sugars necessary for the secondary fermentation in the bottle. The three years old beers bring their bouquet and their finesse.

Saint-Gilloise: in order to preserve the delicacy of the hops, the lambics chosen for the elaboration of the Cuvée Saint-Gilloise are elegant and very fine, which preserves the acidity/bitterness balance. As there is no blending with young lambic (as for the Gueuze) and no fructose addition (as for the fruit beers), the second fermentation in the bottle of the Cuvée Saint-Gilloise is made by an addition of liquid sucrose. Like all the beers of the Cantillon brewery, the Cuvée Saint-Gilloise is a beer with a very long shelf life, but like all the hopped beers, it is advised to drink it young to find the floral side of the hops.
