Sémillon - 2019 - Hardy Wallace

Dirty and Rowdy

A nose with notes of yellow melon, citrus fruits, and white flowers... Forget all the cliché characteristics we’ve come to expect from the Sauvignon varietal! A fascinating wine! Here, use of skin-contact on a "white" wine brings lovely structure, without any heaviness. A great discovery.

100% Semillon, from vines farmed organically and without irrigation, planted in Yountville in Napa Valley, at 120 metres altitude. 70% of the harvest is destemmed and macerated with the skins for 24 days, while 10% ferments in whole bunches for a fortnight, and the rest is pressed immediately. The vinification is natural and without additives, with maturation in concrete eggs, and just a microdose of sulphur at bottling.
