A 100% Sciacarello cuvée, grown on granite sands. The vines are 26 years old and farmed biodynamically (certified by DEMETER since 2000), with green cover between the rows, and sheep grazing through the winter. Vinification: hand picking, meticulous sorting, low yields, maceration 15 days in conical wood vats, with cap punching and pumping over in alternation. Maturation 12 months in demi-muid oak barrels. Light filtration, sensible use of sulphur.
