Blend of Macabeu, Grenache Gris, and Grenache Blanc, roughly in equal parts, from old vines farmed organically and planted on granite, micaschist, and quartz soils. The grapes were harvested by hand and naturally vinified: total hand destemming of the berries—like white caviar! Co-fermentation of the three varieties for 12 days, gentle pressing in a ratchet press, 4 months of aging in old barrels. Bottled unfined and unfiltered, with just a micro-dose of sulfites (1 g/hL during racking of the barrels).
