South West
Sherry Cask Whisky - Maison Victors
Maison Victors
Powerful, complex, and unapologetically indulgent nose, with layers of date, almond, caramelised orange, and sticky toffee pudding vibes. The palate is smooth and velvety, unfolding with caramel, fig, and a return of those nutty notes. The finish is like a soft caress with a beautiful, lingering aromatic trail, subtly spiced and touched with chocolate. A proper crush—like pretty much everything coming out of Maison Victors, really...

A certified organic Single Malt, brewed at the distillery from barley grown and malted in the South-West of France. Long fermentation of 7 days, double distillation in pot stills, aged in ex-Sherry casks (two of Oloroso and two of Pedro Ximenez), which Gilles buys directly from Andalusian bodegas. These are first-fill casks, meaning they’ve only held Sherry before.
Maison Victors is a small organic distillery based in Vacquiers, just outside Toulouse, founded by the one and only Gilles Victors back in 2017. After a wildly eclectic journey, this slightly mad former master knife-maker — known for crafting blades that could fetch tens of thousands of euros — decided to drop everything… all for the love of whisky! Obsessed with his favourite spirit, he started out by attending a few masterclasses, before diving headfirst into the world of pot stills. Gilles trained in Cognac, then headed up to Scotland, where he gained solid experience — notably at Springbank — honing his skills in traditional distillation. During his time in Scotland, he also fell for craft gins, discovering the category during a fateful gin-soaked night out. Back in France, Gilles designed his own stills and built the distillery from scratch, entirely in his image. Maison Victors is artisanal, organic, and deeply ecological — one of the finest distilleries in France. Every detail is considered: these are spirits as works of art. Bold, aromatic, inventive, and local to the bone. Crafted to make you travel… without ever leaving Occitanie.
