A beautiful success for this cuvée, where the barrel never takes over but simply elevates the pure, gourmand aromatics of the two grape varieties. On the palate: plenty of volume, rich and full, with an elongated, perfectly balanced finish tinged with mirabelle plum.

A 50/50 blend of Chardonnay and Auxerrois from organically farmed vines, all hand-harvested. A natural and rather unusual vinification: only the free-run juice goes into this cuvée — a bit like a “white saignée” — no pressing involved. The juice goes straight into barrels where fermentation kicks off, followed by one year of ageing in the very same barrels. Bottled at the domaine without fining, filtration, or added sulphur. Then left to slumber for two full years in the estate’s cellars before release.

Pierre Weber took over his grandfather's vines in 2020, on the very day the lockdown was announced. Flashback: son of an oenologist and grandson of a winemaker, Pierre was never drawn to the wine world, which seemed full of complications. After studying energy and urban planning, he spent five years developing Paris' Climate Plan. He wanted to make a difference but craved something more...
