100% Mondeuse Noire from the Domaine's négoce, purchase of organic grapes from a massal selection and vines planted on the hillsides in Saint-Jean-de-la-Porte. Manual harvesting, 15 days of maceration in whole bunches, vinification and two years of aging in sandstone amphoras, then one year of maturation in the bottle at the Estate. No fining or filtration, without added sulfites.
