Single-vineyard cuvée planted in 2015 and nearly abandoned before being taken over by Les Horées in 2022 and farmed biodynamically since. 1.7 hectares of vines surrounded by forest, planted with 95% Chardonnay and 5% Pinot Blanc. Western exposure, shallow soils with plenty of large limestone rocks. Vinification: whole-cluster direct press in a vertical press, then racked into 228L and 500L barrels for fermentation and 10 months of aging. Just a micro-dose of sulphur added after malolactic fermentation. Bottled at the estate in July 2024.

Catharina Sadde
Catharina Sadde is the woman at the helm of Domaine Les Horées, founded in 2019. Born in Germany, she began her career as a cook, but after experiencing a grape harvest in the Nahe region of West Germany, decided to head down the vineyard path. She pursued a master's degree in viticulture and oenology at the University of Geisenheim. From 2010 to 2018, she took on a succession of internships...
