A blend of 90% Pinot Noir and 10% Gamay, from the Charrat hillside, left bank (limestone scree) and Chamoson, right bank (limestone alluvium). The vines are 20 to 40 years old, farmed biodynamically, and harvested by hand with small crates. Vinification: the grapes are 100% destemmed, macerated for about two weeks, with indigenous yeasts, and 6 months of maturation in vats. A light filtration at bottling, and a just micro dose of sulphur.
