En Gerlieus - 2021 - Talloulah et Hugo Mathurin

100% Aligoté, from 30- and 85-year-old vines planted on clay over limestone and facing north/northeast. Harvested by hand. The grapes are pressed directly, with almost no settling before transfer into barrels (the wine thus remains a bit cloudy), with 20% matured in barrels that have seen 3 to 10 wines and 80% in stoneware jars with little porosity. Bottled mid-December 2022 without fining or filtering, and 0.5 gram/liter of volcanic sulphur.
