A 100% Aligoté cuvée made from 50-year-old vines farmed organically and planted on two parcels: Les Précharons in Prémeaux-Prissey and La Rupille in Prissey, on clay soils. There is natural grassing between the vines, which are thinned out early in the season to accustom the berries to the sun. Vinification: direct pressing then transfer by gravity into stainless-steel vats for alcoholic and malolactic fermentation and 10 months of maturation. Bottled in August 2022.
