In the vigneron’s words: "A period of maceration on the skins gives the wine structure and additional texture, making it more vinous. A precise nose with notes of pear, and a palate with beautiful freshness and vivacity".
100% Aligoté, from 50-year-old vines farmed organically on clay-loam soils at two vineyard sites: Les Précharons and Rouanchottes in the commune of Prémeaux-Prissey. Only the ripest grapes are selected from the two plots. With natural grassing grown between the rows, the vines’ leaves are thinned out early to accustom the berries to the sun. The grapes are harvested by hand, with careful sorting in the vineyard and in the cellar. Pressed in the spring of 2022, the wine undergoes a period of maceration on the skins, in barrels. 300 bottles produced.
