100% Aligoté from 35-year-old vines, grown organically and planted on clay with very little earth, nearly flush with the bedrock... The grapes come from the hottest part of the parcel, harvested overripe. Vinification: direct pressing, fermented in 500-litre barrels, then matured in those same barrels on its lees for one year, followed by six months in vats. Sensible sulphite use.

Edouard Lepesme worked until 2010 in the bulk wine trade. Then in 2011, he decided to pursue a degree in viticulture and oenology in Beaune, one of the most complete training programmes to become a vigneron. Diploma in the bag, he headed off to work in Chablis with (well, well!) Thomas Pico and Alice & Olivier De Moor , continuing down to Claire Naudin ’s Côte de Nuits Domaine,...
