Pinot Noir made from 60-year-old vines farmed biodynamically and planted on a 0.31-hectare plot in Pommard, with deep, brown, well-drained clay-limestone soils facing east. The grapes are harvested by hand, of course, and vinified naturally: 80% whole bunches, cut into small clusters in order to remove the main stem, then gently pressed, followed by 15 months of maturation in barrels that have seen several wines. Neither fined nor filtered, and just a microdose of sulphur at bottling, done at the estate.
