New cuvée for the 2023 vintage, 100% Pinot Noir from organically farmed grapes, sourced from two high-altitude parcels at the top of the Volnay slope: Sur Roches and Paux Bois. Lots of exposed rocks, very little topsoil, southeast-facing. Manual harvest and natural vinification: 50% whole bunches, gentle maceration, 14 months of aging in barrels, without new oak. Bottled at the Domaine in November 2024, unfined, unfiltered, with just a micro-dose of sulphur.

Catharina Sadde
Catharina Sadde is the woman at the helm of Domaine Les Horées, founded in 2019. Born in Germany, she began her career as a cook, but after experiencing a grape harvest in the Nahe region of West Germany, decided to head down the vineyard path. She pursued a master's degree in viticulture and oenology at the University of Geisenheim. From 2010 to 2018, she took on a succession of internships...
