A Blanc de Blancs Champagne, so 100% Chardonnay from vines grown biodynamically (the 7-hectare Estate is certified by Demeter) and planted on marl soils, on the Le Temple parcel situated at the West extremity of the appelation, in Nanteuil-sur-Marne. It comes from grapes harvested manually, mainly from the 2020 harvest. Direct pressing, vinification in casks, the malolactic fermentation is complete, aging on laths, disgorged on the 6th of March 2023, without dosage.
Jérôme Bourgeois
Jérôme Bourgeois, child of the ’77 vintage, is a very dynamic vigneron, born into a family of champagne producers with a history four generations deep. The 7-hectare estate is made up of some 20 parcels scattered around the town of Crouttes-sur-Marne, halfway between Reims and Paris. Jérôme took over the vines at the beginning of the 2000s from his parents, who had never bottled much wine...
