A 100% Pinot Noir cuvée from vines planted at 300 metres altitude in the village of Lenswood in southeast Australia. The grapes are harvested by hand, macerated for one month in whole bunches, fermented with indigenous yeasts, followed by gentle pressing, 10 months of maturation in French oak barrels that have seen two to three wines, and 10% new barrels. Neither filtered nor fined, the barrels are blended at bottling, with a microdose of sulphur to protect the wine.
