100% Pinot Blanc from old vines farmed sustainably, planted on a south-facing parcel directly adjoining the estate, on schist soils rich in stone and iron. Harvested. by hand in October, with perfectly healthy grapes. Gentle crushing of the berries followed by a few hours of skin contact, then pressing and spontaneous, slow, temperature-controlled fermentation. Aged for 10 months on fine lees in new oak barrels. Bottled without fining or filtration.
