100% Pinot Noir from sustainably farmed vines planted on decomposed clay soils. Hand-harvested in early October: careful vineyard work and rigorous sorting during the manual harvest ensured fully ripe, healthy grapes. Vinification: half of the grapes are direct-pressed as whole clusters, the other half undergoes maceration for red wine, including a saignée (drawing off a portion of juice from the red wine tank). Indigenous yeasts, aged in tanks.
