A 100% Cortese cuvée cultivated on a red clay soil, rich in iron. Vinification: slow pressing (24 hours), matured in 25-hl acacia wood barrels for 15 months. Zero sulphites added. In Stefano’s words: "It has a definite personality, completely recognisable. A very determined wine, which advances straight ahead like someone who knows where they’re going; even its complexity and aromatic suggestions are similarly focused in their intensity. It has an almost metallic minerality, which makes me think of the 1970s rock group, "Iron butterfly".
Ilaria Bellotti, humble winegrower with a big heart, is none other than the daughter of Stefano Bellotti from Cascina degli Ulivi. Stefano sadly passed away in the midst of the 2018 harvest...
