100% Chasselas from 20-year-old vines planted on a 0.3-ha plot of clay-limestone soil. Harvested by hand in early October when overripe, and at minuscule yields: 5hl/ha! The grapes are then left to dry in the open air until they’ve lost half their weight. Delicate de-stemming, gentle crushing, 7 days of maceration on the skins, minimum two years of maturation in barrels that have seen several wines. Neither fined nor filtered, and no added sulphites.
