100% Menu Pineau from vines farmed organically and planted on a flinty clay soil. The grapes are late harvested, with ultra low yields of 7 to 12 hl/ha! Natural vinification and an unconventional approach to maturation – 120 months in barrels without ouillage, i.e. the custom of topping up the barrels regularly to compensate for the phenomenon of evaporation known as “the angels share”. When a barrel is not topped up for a long time a veil of flor develops on the surface of the wine; the flor is nourished by the wine, which in turn develops notes of walnuts and an aromatic palette of great complexity.
