A full, expressive nose of blackberries, blackcurrant, blueberry and intense notes of spice and white pepper. The attack is suave, then intense yet charming on the mid-palate, fine tannins, beautiful volume, chiselled fruit flavours, and finally a red berry finish with fine bitter notes.

A blend of 70% Cabernet Sauvignon and 30% Egiodola, a grape variety which in Basque means “Pure Blood”, from vines farmed biodynamically and planted on Gneiss and Orthogneiss soils. The grapes are harvested by hand, the harvest is received in the winery by gravity, followed by a respectful vinification: de-stemming, 10 days in vats with indigenous yeasts, no fining, no filtration, and sensible use of sulphites – just enough to stabilise the bottle.

Fred bought Domaine de l'Écu in 2010, with its perfect soils cultivated organically since 1972, then certified biodynamic by DEMETER in 1998. He’s been collaborating with Guy Bossard since 2014, the master of Muscadet. The pairing is simply miraculous. Fred, a novice at winegrowing but an unparalleled taster, knows exactly what he wants and what he intends to do for wine in the Muscadet....
