A robe with the hue of soft wheat. An elegant nose, with pronounced mineral notes, and aromas of lemon and grapefruit. Next come more delicate notes of white flowers, dried fruits, almond and toasted aromas. On the palate this is full-bodied, opulent wine, balanced by its fine acidity and a vibrancy which sustains its equilibrium. A wine endowed with great length and a peppery finish.
Fred bought Domaine de l'Écu in 2010, with its perfect soils cultivated organically since 1972, then certified biodynamic by DEMETER in 1996. But perhaps his top asset is the man he’s been collaborating with since 2014 – Guy Bossard, the master of Muscadet. The pairing is simply miraculous. Fred, a novice at winegrowing but an unparalleled taster, knows exactly what he wants and what he intends to do for wine here in the Muscadet, alongside Guy. Folle Blanche and Melon de Bourgogne have been transformed, along with the estate’s classic cuvées still being made, into very great natural wines, made with little to no sulphites. The red grape parcels which once served to make the estate’s sparkling wines, are now vinified as dry red wines, offering splendid cuvées of Cabernet Franc, Cabernet Sauvignon, and Pinot Noir. After all, when your parcels are 30 to 40 years old and have never seen a single drop of pesticides, it would be a shame to deprive yourself! The estate even does some vinifications using amphorae. The knowledge and wisdom of Guy and the energy and modernity of Fred. Fred has taken his estate in a whole new direction, and Muscadet along with it...
A subtle, elegant nose, redolent of citrus peel, with notes of white flowers, spice and cumin, followed by dried fruit, toasted almonds, and mineral and iodised notes. The palate is complex and open, with great volume: ripe citrus, saline notes, and hints of smoke. A pink grapefruit finish.
