Blend of 50% Grenache, 30% Syrah, and 20% Cabernet Sauvignon from vines coming from massal selection, averaging 45 years old, farmed organically with biodynamic practices on Cretaceous limestone hillsides. The grapes were harvested by hand with low yields around 20 hl/ha. Natural vinification: total destemming, maceration for three weeks in wooden tronconic vats with daily and gentle punch-downs. Pressed and aged for two years in 30 hl oak casks, without new oak.
