Blend of 40% Syrah, 30% Grenache and 30% Cabernet Sauvignon, from massal-selected vines averaging 20 years old, organically farmed with biodynamic practices on Cretaceous limestone hillsides. The grapes were harvested by hand, with low yields around 20 hl/ha. Natural vinification: total destemming, three-week maceration in wooden tronconic vats with soft daily punch-downs. Pressing, aging for one year in stainless steel vats and in a 30-hl wooden cask, without new oak.
