80% Sérine and 20% Cabernet Sauvignon from organically farmed vines planted at 160 meters on the north-facing slopes of the Luberon Massif, on clay-limestone soils. Hand-harvested in 12 kg crates, gravity-fed into tanks (whole clusters for the Sérine), with each variety vinified separately. Gentle punch-downs and pump-overs, 3-week maceration. Pressing, 18 months of aging in 1-vin Burgundy barrels for the Sérine and new oak for the Cabernet. Blended afterward, followed by 5 months of further aging in tanks before bottling at the Domaine.

Baptiste Olivier has been the co-pilot of Ad Fines since 2018, the tiny Luberon estate founded by Michel Rocher back in 1994. Though Baptiste hails from Léognan and cut his teeth in the U.S., Australia, and at Smith Haut Lafitte, his true passion lies with Rhône wines.
