A lovely, delicate, fruit-focused juice, not very tannic, but supple and joyous. Encapsulating the great purity of its grapes, this is a luscious wine full of red fruits, with tannins of real finesse… What do you expect from a wine named after a classic Black Sabbath song!?
A blend of 85% young Grenache Noir vines from a 25-ares plot, and 15% old Carignan vines, both grape varieties being farmed biodynamically and the grapes harvested by hand. Soil: large pebbles, situated in the commune of Bellegarde. Vinification: full destemming, maceration of both grape varieties together for eight days, fermentation with indigenous yeasts, gentle pressing in order to preserve the fruit flavours, and 10 months of maturation in egg-shaped concrete vats. Neither fined nor filtered, and just a microdose of sulphur at bottling.
Sylvain Boutée is not really a Southern guy since he is originally from… Maroilles, on the Belgian border!
