A sublime wine from Gauby, now at its peak of maturity, offering a truly unforgettable tasting experience... The tannins have softened, and the aromas have evolved into notes of forest floor, leather, blackcurrant jam, and dried flowers. Phenomenal length. Decanting is recommended.
A Côtes Catalanes wine from a terroir of schist and limestone, made from Carignan (35%), Syrah (30%), Grenache Noir, and Mourvèdre. The vines are between 30 and 120 years old and are farmed organically. The grapes are harvested by hand, with yields of around 18 hl/ha. The Gaubys also practice mixed farming to promote biodiversity around their vineyards. Vinification: whole-cluster maceration for 10 days, using indigenous yeasts. Aging: 10 months in 500-liter barrels and large oak casks. Bottled by gravity, without fining nor filtration.
