A blended cuvée of 85% Muscat Petit Grain and 15% Muscat d'Alexandrie, grown on a schist soil facing northeast. The vines are about 15 years old and are farmed organically. The Gaubys are also adepts of polyculture, which they use to recreate biodiversity around their vines. Natural vinification: maceration of whole bunches for about 4 weeks in concrete vats, with indigenous yeasts, delicate pressing, and 7 months of aging in large barrels. Bottled by gravity, without fining or filtration.
