82% Chardonnay and 18% various grape varieties from vines grown organically and planted on a South-facing hillside, superficial brown clay soils. Manual harvest on September the 21st. Pressing, two days of natural settling by gravity, the alcoholic fermentation is not finished therefore there still are sugars in this cuvée, 3 years of aging in stainless steel vats. Only 75 bottles produced, bottled by gravity on September 15th and 16th, 2021. Not fined, not filtered, without added sulphites.
