Contrary to Marc de Bourgogne, Fine de Bourgogne comes from the distillation of the fine lees of the wine, which are recovered from the racking of the barrels, in this case filled with Gamay Petit Grain and Pinot Fin. Distillation is done with local spring water... (a subterranean lake is located under the estate). Aged for 15 years in a single 120-litre barrel, this is a limited edition bottling: only 233 bottles produced.
Julien Guillot is a face of youth and renewal for the Mâconnais. He started working in 1998 on his family’s estate, spearheading its conversion to biodynamics, and finally taking over the reigns in 2001.
